Preheat the oven to 350°F (175°C).

Peel and chop the sweet potatoes into small cubes.

In a large bowl, combine the sweet potatoes, coconut milk, maple syrup, cinnamon, nutmeg, ginger, vanilla extract, and salt. Mix well.

Transfer the mixture to a baking dish and cover with foil.

Bake for 40 minutes, or until the sweet potatoes are soft.

Remove the foil and bake for an additional 5 minutes to allow the top to brown slightly.

Remove from the oven and let it rest for 30 minutes.
