Preheat the oven to 400°F (200°C). Cut the pumpkin into small cubes.

In a bowl, mix the pumpkin cubes with 1 tablespoon of olive oil, cumin, cinnamon, paprika, salt, and black pepper.

Spread the spiced pumpkin cubes on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.

Meanwhile, rinse the quinoa thoroughly and cook it according to the package instructions.

Once the quinoa is cooked, fluff it with a fork and let it cool for 5 minutes.

In a large bowl, combine the roasted pumpkin, cooked quinoa, fresh parsley, lemon juice, and 1 tablespoon of olive oil. Mix well.
