  1. Preheat the oven to 350°F (175°C). Grease and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, cocoa powder, coconut sugar, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix well.
  3. In a separate bowl, whisk together eggs, coconut oil, maple syrup, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until well combined.
  5. Pour the batter onto the prepared baking sheet and spread it evenly.
  6. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool for 10 minutes.
  8. Carefully roll the cake into a log shape using the parchment paper.
  9. Let it rest for 2 hours.
  10. In the meantime, prepare the frosting by melting dark chocolate and mixing it with coconut cream.
  11. Once the log has cooled, unroll it and spread the frosting evenly.
  12. Roll it back up and place it in the refrigerator for 1 hour.
  13. Before serving, decorate with pomegranate seeds and fresh mint leaves.
  14. Slice and serve.
