Spiced Moong Beans

Moong beans are a good source of plant-based protein and are commonly used in Indian cuisine for their nutritional value.

Wash the moong beans and soak them in water for 30 minutes.

Drain the water and rinse the beans again.

In a pressure cooker, add the moong beans and 2 cups of water. Cook for 3-4 whistles or until the beans are soft.

In a pan, heat oil and add cumin seeds. Let them splutter.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and sauté for a minute.

Add chopped tomatoes and cook until they turn mushy.

Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.

Add the cooked moong beans along with the water. Mix everything together.

Cook for 5 minutes on medium heat.

Garnish with fresh coriander leaves and lemon juice.

Serve hot with rice or roti.
