Spiced Lentils and Cantaloupe
Lentils are a great source of plant-based protein and are commonly used in vegetarian and vegan dishes around the world. Cantaloupe, on the other hand, adds a refreshing and sweet twist to this spiced lentil recipe.

Rinse the lentils and soak them in water for 10 minutes.

In a pot, heat some oil and sauté the chopped onion, garlic, and ginger until fragrant.

Add the turmeric, cumin, coriander, chili powder, and salt. Stir well.

Drain the lentils and add them to the pot. Mix everything together.

Pour in the coconut milk and bring to a boil. Reduce heat and let it simmer for 20 minutes or until the lentils are tender.

While the lentils are cooking, peel and dice the cantaloupe.

Once the lentils are cooked, remove from heat and let them rest for 10 minutes.

Serve the spiced lentils with a scoop of diced cantaloupe on top.

Garnish with fresh cilantro and a squeeze of lime juice.
