Onion soup has been a popular dish in France since ancient times and is often associated with French cuisine.

Heat olive oil in a large pot over medium heat. Add onions and cook until caramelized, about 15 minutes.

Add minced garlic, thyme, bay leaf, salt, and black pepper to the pot. Cook for another 2 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.

Meanwhile, preheat the oven to 375°F (190°C).

Place bread slices on a baking sheet and toast in the oven until golden brown.

Remove the bay leaf from the soup and blend the soup using an immersion blender until smooth.

Ladle the soup into oven-safe bowls. Top each bowl with a toasted bread slice and sprinkle with Gruyere and Parmesan cheese.

Place the bowls under the broiler until the cheese is melted and bubbly.

Allow the soup to rest for 5 minutes before serving.
