Rinse the lentils under cold water.

In a large pot, heat some oil over medium heat and sauté the onion and garlic until translucent.

Add the carrots, celery, cumin, coriander, turmeric, and cayenne pepper. Cook for a few minutes until the vegetables are slightly softened.

Add the lentils, vegetable broth, and water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the lentils are tender.

Remove from heat and let the soup rest for 5 minutes.

Use an immersion blender or a regular blender to blend the soup until smooth.

Stir in the lemon juice, fresh cilantro, salt, and black pepper.

Serve hot and garnish with additional cilantro if desired.
