Chickpeas, also known as garbanzo beans, are one of the oldest cultivated crops and have been consumed for thousands of years.

  1. Preheat the oven to 200°C (400°F). Drain and rinse the chickpeas.
  2. Cut the cauliflower into florets.
  3. In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, ground cumin, ground coriander, turmeric powder, paprika, salt, and black pepper.
  4. Spread the spiced cauliflower on a baking sheet and roast in the preheated oven for 25-30 minutes, until golden brown and tender.
  5. Meanwhile, heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped onion and minced garlic cloves. Sauté until the onion is translucent and fragrant.
  6. Add the drained chickpeas to the pan and cook for 5-7 minutes, until heated through.
  7. Mash the roasted cauliflower using a potato masher or fork until smooth and creamy.
  8. Serve the spiced chickpeas over the cauliflower mash, garnished with fresh cilantro and a squeeze of lemon juice.
