  3. In a large bowl, combine the grated cauliflower, onion, minced garlic, chickpea flour, ground cumin, ground coriander, turmeric powder, cayenne pepper, salt, and black pepper.
  4. Mix well until all the ingredients are evenly combined.
  5. Heat vegetable oil in a large non-stick skillet over medium heat.
  6. Take a small handful of the cauliflower mixture and shape it into a patty.
  7. Place the patty in the skillet and flatten it with a spatula.
  8. Cook the latkes for about 3-4 minutes on each side, until golden brown and crispy.
  9. Remove the latkes from the skillet and place them on a paper towel-lined plate to drain any excess oil.
