Spiced Butternut Squash Couscous
Butternut squash is a great source of vitamin A, which is important for maintaining healthy vision and a strong immune system.

Preheat the oven to 200°C (400°F).

Peel and dice the butternut squash into small cubes.

Toss the butternut squash cubes with 1 tablespoon of olive oil, ground cumin, ground coriander, cinnamon, salt, and black pepper.

Spread the seasoned butternut squash on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.

In the meantime, heat 1 tablespoon of olive oil in a large pan over medium heat.

Add the diced onion and minced garlic to the pan and sauté until translucent.

Add the couscous to the pan and toast for 2-3 minutes, stirring constantly.

Pour in the vegetable stock and bring to a boil.

Reduce the heat to low, cover the pan, and let the couscous simmer for 10 minutes, or until all the liquid is absorbed.

Fluff the cooked couscous with a fork and transfer it to a serving dish.

Add the roasted butternut squash cubes, chopped parsley, lemon juice, and additional salt and pepper to taste.

Toss everything together gently until well combined.
