Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent.

Add the smoked ham hock to the pot and cook for a few minutes to release its flavor.

Pour in the vegetable broth and bring to a boil. Reduce the heat to low and simmer for 45 minutes.

Add the chopped collard greens to the pot. Stir in apple cider vinegar, hot sauce, salt, black pepper, and sugar.

Remove the ham hock from the pot and shred the meat. Discard the bone and return the meat to the pot.
