  2. In a food processor, pulse the pistachios until finely ground.
  3. In a mixing bowl, combine the ground pistachios, almond flour, coconut sugar, vanilla extract, egg white, and salt. Mix until well combined.
  4. Line a baking sheet with parchment paper.
  5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 1 inch apart.
  6. Flatten each portion with the back of a spoon or your fingers until they are about 1/4 inch thick.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Remove from the oven and let cool on the baking sheet for 5 minutes.
  9. Transfer to a wire rack to cool completely.
