  1. Prepare all the ingredients by julienning the carrot and cucumber, and washing the lettuce, mint, and cilantro leaves.
  2. Cook the rice vermicelli noodles according to package instructions, then drain and rinse with cold water.
  3. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens.
  4. Place the softened rice paper wrapper on a clean surface. Arrange a lettuce leaf, a small handful of rice vermicelli noodles, carrot and cucumber juliennes, mint and cilantro leaves, and crushed peanuts in the center of the wrapper.
  5. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to form a summer roll.
  6. Repeat with the remaining ingredients.
  7. In a small bowl, whisk together peanut butter, soy sauce, lime juice, water, minced garlic, and honey to make the peanut dipping sauce.
