Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil. Add the quinoa and simmer for 15-20 minutes, or until the liquid is absorbed and the quinoa is tender.

Add the bell pepper, zucchini, and cherry tomatoes to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
