  1. Rinse the lentils under cold water and set aside.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the onion and garlic, and sauté until softened.
  4. Add the carrots and potatoes, and cook for another 5 minutes.
  5. Stir in the tomato paste, cumin, turmeric, paprika, salt, and black pepper.
  6. Add the lentils and vegetable broth, and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 30 minutes or until lentils are tender.
  8. Remove from heat and let it rest for 10 minutes.
  9. Stir in fresh parsley and lemon juice.
  10. Serve hot and enjoy!
