  1. Press the tofu to remove excess water and shred it into thin strips.
  2. Heat sesame oil in a large skillet or wok over medium heat.
  3. Add minced garlic and ginger, and stir-fry for 1 minute.
  4. Add shredded tofu and stir-fry for 3-4 minutes until lightly browned.
  5. Add sliced bell peppers, carrots, and broccoli florets. Stir-fry for another 3-4 minutes until vegetables are tender-crisp.
  6. In a small bowl, whisk together soy sauce, cornstarch, vegetable broth, salt, and black pepper.
  7. Pour the sauce over the stir-fry and cook for 1-2 minutes until thickened.
  8. Garnish with sliced green onions and serve hot with rice or noodles.
