  1. Rinse and drain the shirataki rice.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, garlic, carrots, and celery. Sauté until vegetables are tender.
  4. Add shirataki rice, vegetable broth, canned tomatoes, kidney beans, Italian seasoning, salt, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in spinach and cook for an additional 5 minutes.
  7. Remove from heat and let it rest for 5 minutes.
  8. Serve hot and enjoy!
