  1. In a large pot, heat oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  2. Add chicken pieces and cook until browned.
  3. Stir in peanut butter, tomato paste, cumin, coriander, cayenne pepper, salt, and black pepper. Cook for a few minutes.
  4. Add sweet potato, carrot, and vegetable stock. Bring to a boil, then reduce heat and simmer for about 20 minutes or until the vegetables are tender.
  5. Remove from heat and let it cool slightly. Use an immersion blender or transfer to a blender to puree the soup until smooth.
  6. Return the soup to the pot and reheat if necessary. Stir in lime juice.
  7. Serve hot, garnished with fresh cilantro.
