In a large pot, heat oil over medium heat. Add the onion, garlic, and ginger, and sauté until the onion is translucent.

Add the peanut butter and stir until well combined.

Add the sweet potatoes, carrots, red bell pepper, vegetable broth, cayenne pepper, cumin, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.

Stir in the coconut milk and cook for an additional 5 minutes.

Serve hot, garnished with fresh cilantro.
