The term ‘veggie burger’ was first used in 1982 by Gregory Sams, a natural foods pioneer, to describe a vegetarian patty that he created.

  1. Drain and rinse the chickpeas.
  2. In a food processor, combine the chickpeas, red bell pepper, onion, garlic cloves, fresh parsley, ground cumin, ground coriander, bread crumbs, salt, and black pepper.
  3. Pulse until well combined but still slightly chunky.
  4. Form the mixture into patties and refrigerate for 10 minutes.
  5. Heat olive oil in a pan over medium heat.
  6. Cook the patties for about 3-4 minutes on each side, until golden brown.
  7. Toast the burger buns.
  8. Assemble the burgers by placing a veggie patty on the bottom bun, followed by lettuce, tomato slices, red onion slices, and pickles.
  9. Serve hot and enjoy!
