Heat vegetable oil in a large pan.

Add chopped onion and sauté until translucent.

Add sliced bell peppers, eggplant, and zucchini to the pan.

Add diced tomatoes, paprika, salt, and black pepper.

Cover the pan and simmer for 20 minutes.

Remove from heat and let it rest for 5 minutes.
