In a large pot, add the soaked beans, chopped onion, carrot, celery, and garlic cloves.

Stir in the tomato paste, bay leaves, paprika, vegetable broth, salt, and pepper.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour or until the beans are tender.

Remove the bay leaves and blend a portion of the soup for a creamier texture, if desired.

Serve hot, garnished with fresh parsley and a dollop of sour cream.
