  2. Cut the potatoes into halves and scoop out the centers to create cups.
  3. Toss the potato cups with olive oil and salt.
  4. Place the potato cups on a baking sheet and roast for 25-30 minutes until golden and crispy.
  5. In the meantime, prepare the loaded guacamole by mashing the avocados in a bowl.
  6. Add lime juice, diced red onion, diced tomato, chopped cilantro, minced garlic, jalapeno, cumin, paprika, salt, and black pepper to the mashed avocados. Mix well.
  7. Once the potato cups are done, let them cool for a few minutes.
  8. Fill each potato cup with the loaded guacamole mixture.
  9. Garnish with additional cilantro if desired.
  10. Serve and enjoy!
