Roasted Pepper Bruschetta
Bruschetta is a traditional Italian dish that dates back to the 15th century. It was originally a way to use up stale bread by toasting it and topping it with fresh ingredients.

Preheat your grill to high heat.

Place the bell peppers on the grill and cook until the skin is charred and blistered, turning occasionally.

Remove the peppers from the grill and place them in a bowl. Cover the bowl with plastic wrap and let them rest for 5 minutes.

After resting, peel off the skin from the peppers and remove the seeds and stems. Slice the peppers into thin strips.

In a small bowl, combine the olive oil, balsamic vinegar, minced garlic, salt, and black pepper.

Add the roasted pepper strips to the bowl and toss to coat them in the dressing. Let them marinate for at least 10 minutes.

Preheat your oven to 375°F (190°C).

Arrange the baguette slices on a baking sheet and brush them with olive oil. Toast them in the oven for about 5 minutes, or until golden brown.

Remove the toasted baguette slices from the oven and let them cool slightly.

Top each slice with a few roasted pepper strips and garnish with fresh basil leaves.

Serve the roasted pepper bruschetta immediately.
