Roasted garlic is milder and sweeter in flavor compared to raw garlic.

  1. Preheat the oven to 400°F (200°C). Cut off the top of the garlic head to expose the cloves. Drizzle with olive oil and wrap in aluminum foil. Roast for 40 minutes.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  3. Peel and dice the potatoes. Add them to the pot along with vegetable broth and fresh thyme. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Squeeze the roasted garlic cloves into the pot. Season with salt and pepper.
  5. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth.
  6. Stir in heavy cream and simmer for another 5 minutes.
  7. Serve hot, garnished with chopped chives.
