  1. Preheat the oven to 200°C (400°F).
  2. Peel and chop the potatoes into small cubes.
  3. In a large pot, bring water to a boil and add the chopped potatoes. Cook until tender, about 15-20 minutes.
  4. While the potatoes are cooking, peel the garlic cloves.
  5. Drain the cooked potatoes and transfer them to a baking sheet.
  6. Add the peeled garlic cloves to the baking sheet with the potatoes.
  7. Drizzle olive oil over the potatoes and garlic. Season with salt and black pepper.
  8. Toss to coat the potatoes and garlic evenly.
  9. Roast in the preheated oven for 10-15 minutes, until the potatoes are golden and the garlic is soft.
  10. Remove from the oven and let cool for a few minutes.
  11. Transfer the roasted potatoes and garlic to a food processor or blender.
  12. Blend until smooth and creamy.
  13. If needed, add a splash of water or plant-based milk to achieve the desired consistency.
  14. Serve the roasted garlic potato puree topped with fresh parsley.
