  1. Preheat the oven to 400°F (200°C).
  2. Cut the cauliflower into florets.
  3. In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
  4. Place the seasoned cauliflower on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
  5. While the cauliflower is roasting, peel and chop the garlic cloves.
  6. Remove the roasted cauliflower from the oven and transfer it to a food processor.
  7. Add the chopped garlic to the food processor.
  8. Pulse until the cauliflower and garlic are mashed and well combined.
  9. Taste and adjust the seasoning if needed.
  10. Transfer the mashed cauliflower to a serving dish.
  11. Garnish with fresh parsley.
  12. Serve hot.
