  2. Make a small incision on each chestnut to prevent them from exploding while roasting.
  3. Place the chestnuts on a baking sheet and roast in the oven for 20-25 minutes, or until the shells start to peel back.
  4. Remove the chestnuts from the oven and let them cool slightly.
  5. Peel the chestnuts, ensuring to remove both the outer shell and inner skin.
  6. In a pan, heat olive oil over medium heat and sauté the chopped onion and garlic until translucent.
  7. Add the peeled chestnuts, thyme leaves, salt, and black pepper to the pan. Cook for an additional 5 minutes.
