Preheat the oven to 425°F (220°C).

Cut the cauliflower into florets and toss with olive oil.

Place the cauliflower on a baking sheet and roast for 25 minutes, or until golden brown.

In a large pot, sauté the onion and garlic until translucent.

Add the roasted cauliflower, vegetable broth, dried dill, salt, and black pepper to the pot.

Bring to a simmer and cook for 10 minutes.

Use an immersion blender to blend the soup until smooth.

Stir in the lemon juice.

Serve the soup hot, topped with a dollop of Greek yogurt and fresh dill.
