Peel and dice the butternut squash into 1-inch cubes.

Slice the red onions into thick wedges.

In a large bowl, toss the butternut squash and red onions with olive oil, salt, black pepper, and fresh thyme.

Spread the mixture evenly on a baking sheet.

Roast in the preheated oven for 30-35 minutes, or until the squash is tender and caramelized.
