Roasted Beets With Toasted Garlic and Walnut Sauce

Preheat the oven to 400°F (200°C).

Trim and peel the beets, then cut them into wedges.

Place the beets on a baking sheet, drizzle with olive oil, sprinkle with salt and black pepper, and toss to coat.

Roast the beets in the preheated oven for 30-35 minutes, or until tender.

Meanwhile, toast the walnuts in a dry skillet over medium heat until fragrant, about 5 minutes. Let them cool, then chop them coarsely.

In the same skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook until golden brown, about 2 minutes.

Transfer the roasted beets to a serving dish.

In a small bowl, whisk together the toasted garlic, chopped walnuts, lemon juice, salt, and pepper.

Drizzle the walnut sauce over the roasted beets.

Garnish with fresh parsley.
