Roasted Asparagus and Apple Salad
Asparagus is a great source of vitamins A, C, and K, as well as folate and fiber.

Preheat the oven to 425°F (220°C).

Trim the ends of the asparagus and cut them into 2-inch pieces.

Toss the asparagus with olive oil, salt, and black pepper.

Arrange the asparagus on a baking sheet and roast for 10-12 minutes, until tender.

In a large bowl, combine the mixed greens, sliced apples, walnuts, and crumbled feta cheese.

In a small bowl, whisk together lemon juice, honey, olive oil, salt, and black pepper to make the dressing.

Drizzle the dressing over the salad and toss to combine.
