Preheat the oven to 350°F (175°C).

Peel and slice the ripe bananas or plantains.

In a bowl, combine the coconut milk, brown sugar, cinnamon powder, vanilla extract, and salt.

Grease a casserole dish and arrange a layer of banana slices.

Pour a portion of the coconut milk mixture over the bananas.

Repeat the layers until all the ingredients are used, ending with a layer of coconut milk mixture.

Sprinkle the shredded coconut and chopped nuts (if using) on top.

Bake in the preheated oven for 30 minutes, or until the casserole is golden and bubbly.
