Cook the rice noodles according to package instructions. Drain and set aside.

In a pan, heat vegetable oil over medium heat. Add minced garlic and chopped red chili. Stir-fry for a minute.

Add cooked rice noodles to the pan and stir-fry for another 2 minutes.

Add soy sauce, lime juice, and salt. Mix well.

Add Thai basil leaves, mint leaves, and peanuts. Stir-fry for another minute.

Remove from heat and let it rest for 5 minutes.
