In a large pot, combine the rice, red kidney beans, coconut milk, water, onion, garlic cloves, thyme, Scotch bonnet pepper, salt, and black pepper.

Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the pot.

Simmer for about 20-25 minutes, or until the rice is tender and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes before fluffing the rice with a fork.
