Cook the red quinoa according to the package instructions.

Finely grate the zucchini and onion. Squeeze out any excess moisture.

In a large bowl, mix together the cooked quinoa, grated zucchini, grated onion, minced garlic, rolled oats, chopped walnuts, chopped parsley, Dijon mustard, cumin, cayenne pepper, salt, and black pepper.

Form the mixture into patties of desired size and shape.

Heat olive oil in a pan over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown.

Toast the hamburger buns.
