Preheat grill or oven to medium-high heat. Grill or roast the red bell pepper until charred. Place the grilled or roasted red bell pepper in a bowl, cover with plastic wrap, and let it cool. Once cooled, remove the skin, seeds, and stem from the red bell pepper and dice it. In a separate bowl, combine the diced red bell pepper, corn kernels, finely chopped red onion, chopped cilantro, lime juice, olive oil, salt, and black pepper. Mix well to combine all the ingredients. Let the relish sit for at least 10 minutes to allow the flavors to meld together. Serve the red pepper and corn relish as a side dish or topping for grilled meats or tacos.
