Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.

Add diced potatoes and cook for 5 minutes, stirring occasionally.

Add vegetable stock, salt, black pepper, and paprika. Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.

Drain and rinse white beans, then add them to the pot along with chopped red chard. Cook for an additional 5 minutes.

Remove from heat and let rest for 10 minutes.

Serve hot, garnished with fresh parsley.
