In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.

Add lentils, vegetable broth, tomato paste, ranch seasoning mix, salt, and black pepper to the pot. Stir well.

Bring the mixture to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.

Remove from heat and let it rest for 5 minutes.
