  1. Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic and cook until fragrant.
  2. Add mixed vegetables and stir-fry for a few minutes until they are tender.
  3. Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked.
  4. Add the cooked rice to the skillet and stir-fry everything together.
  5. Pour soy sauce over the rice and mix well. Season with salt to taste.
  6. Add chopped scallions and continue to stir-fry for another minute.
  7. Remove from heat and let it rest for 5 minutes before serving.
