Quinoa with Chipotle-Lime Dressing

Quinoa with Chipotle-Lime Dressing

Rinse the quinoa under cold water.

In a saucepan, bring water to a boil and add the quinoa.

Reduce heat, cover, and simmer for 15-20 minutes or until the quinoa is tender and the water is absorbed.

In a large bowl, combine the cooked quinoa, black beans, corn kernels, diced red bell pepper, chopped cilantro, and diced avocado.

In a small bowl, whisk together lime juice, olive oil, honey, chipotle pepper in adobo sauce, minced garlic, salt, and black pepper to make the dressing.

Pour the dressing over the quinoa mixture and toss to coat evenly.

Let the salad rest for 5 minutes to allow the flavors to meld together.
