Cook quinoa according to package instructions.

Preheat the oven to 400°F (200°C).

Peel and dice the sweet potatoes. Place them on a baking sheet, drizzle with olive oil, salt, and black pepper. Roast for 20 minutes or until tender.

In a large bowl, combine cooked quinoa, roasted sweet potatoes, black beans, diced red bell pepper, diced cucumber, diced red onion, and chopped fresh cilantro.

In a small bowl, whisk together lime juice, olive oil, salt, ground cumin, garlic powder, and black pepper.

Pour the dressing over the salad and toss to combine.

Let the salad rest for 10 minutes to allow the flavors to meld.
