  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the flesh, leaving about 1/4 inch thick shells. Chop the scooped out flesh and set aside.
  3. In a saucepan, cook the quinoa according to package instructions.
  4. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and red bell pepper. Sauté until vegetables are tender.
  5. Add the chopped zucchini flesh, cooked quinoa, diced tomatoes, parsley, salt, black pepper, and paprika to the skillet. Cook for another 5 minutes, stirring occasionally.
  6. Fill each zucchini shell with the quinoa mixture. Place them in a baking dish.
  7. If desired, sprinkle vegan cheese on top of the stuffed zucchini.
  8. Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender.
  9. Let it rest for 10 minutes before serving.
