  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.
  2. Add diced bell peppers and grated carrots. Cook for 5 minutes.
  3. Add canned diced tomatoes, drained and rinsed kidney beans, drained and rinsed black beans, frozen corn, chili powder, cumin, paprika, salt, and black pepper. Stir well.
  4. Pour in water and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Serve hot and enjoy!
