Provence Artichoke Soup

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Cook until onion becomes translucent.

Add artichoke hearts, peeled and diced potatoes, and fresh thyme. Stir well.

Pour vegetable stock into the pot. Bring to a boil and then reduce heat to simmer. Cook until the potatoes are tender.

Remove the thyme sprigs and let the soup cool slightly.

Use a blender to puree the soup until smooth.

Return the soup to the pot and reheat gently. Season with salt, black pepper, and lemon juice.

Serve hot, garnished with fresh parsley.
