  1. Rinse and peel the potatoes. Cut them into cubes.
  2. Rinse the chickpeas thoroughly and set aside.
  3. Cut the cauliflower into small florets.
  4. Preheat the oven to 200°C (400°F). Toss the cauliflower florets with crushed garlic, salt, and olive oil. Roast in the oven for 20 minutes or until golden brown.
  5. In a pan, heat oil. Add cumin seeds and let them crackle.
  6. Add finely chopped onions and grated ginger. Saute until onions turn golden brown.
  7. Add the chopped tomatoes and cook until they become mushy.
  8. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  9. Add the cubed potatoes and chickpeas to the tomato mixture. Stir to coat them with the spices.
  10. Cover and cook for 15 minutes or until the potatoes are tender.
  11. Add garam masala and mix well. Cook for an additional 2 minutes.
  12. Add chopped coriander leaves and lemon juice. Mix well.
  13. Serve the potato chick-pea curry with garlic roasted cauliflower, basmati rice, and cha (Indian tea). Enjoy!
