Portabella mushrooms are actually mature cremini mushrooms and have a rich, meaty flavor.

  1. Preheat the oven to 400°F (200°C).
  2. Clean the portabella mushrooms and remove the stems.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper.
  4. Brush the mushroom caps with the marinade mixture.
  5. Place the mushrooms on a baking sheet and bake for 15 minutes.
  6. Remove from the oven and let them rest for 5 minutes.
  7. Top each mushroom cap with a slice of tomato, a slice of fresh mozzarella, and fresh basil leaves.
  8. Return the mushrooms to the oven and bake for an additional 5 minutes, or until the cheese is melted.
  9. Serve hot and enjoy!
