Portabella Nirvana
Portabella mushrooms are actually mature cremini mushrooms and have a rich, meaty flavor.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the oven to 400°F (200°C).

Clean the portabella mushrooms and remove the stems.

In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper.

Brush the mushroom caps with the marinade mixture.

Place the mushrooms on a baking sheet and bake for 15 minutes.

Remove from the oven and let them rest for 5 minutes.

Top each mushroom cap with a slice of tomato, a slice of fresh mozzarella, and fresh basil leaves.

Return the mushrooms to the oven and bake for an additional 5 minutes, or until the cheese is melted.
