  1. Peel and slice the plantains.
  2. In a bowl, mix chickpea flour, water, turmeric powder, black salt, and black pepper to make a batter.
  3. Heat olive oil in a non-stick pan.
  4. Dip the plantain slices in the batter and place them on the pan.
  5. Cook for 2-3 minutes on each side until golden brown.
  6. Remove the plantain slices from the pan and set aside.
  7. In the same pan, sauté onion, red bell pepper, and tomato until softened.
  8. Add spinach and cook for another minute.
  9. Pour the remaining batter over the vegetables and cook until set.
  10. Place the cooked plantain slices on top of the omelette.
  11. Fold the omelette in half and cook for another minute.
  12. Serve hot.
