  1. Peel the plantains and cut them into thin slices.
  2. Heat the vegetable oil in a frying pan over medium heat.
  3. Fry the plantain slices until golden brown and crispy. Remove from the pan and set aside.
  4. In the same pan, add the chopped onion, garlic, tomato, red bell pepper, and scotch bonnet pepper. Cook until the vegetables are soft.
  5. Add the thyme, curry powder, paprika, salt, and black pepper. Stir well.
  6. Pour in the water and simmer for 5 minutes.
  7. Remove from heat and blend the sauce until smooth.
  8. Return the sauce to the pan and add the fried plantain slices. Mix well.
  9. Cook for an additional 2 minutes to allow the flavors to blend.
  10. Garnish with chopped cilantro and drizzle with lime juice.
  11. Serve hot and enjoy!
