In a large skillet, melt the butter over medium heat. Add the onion and celery, and cook until softened.

In a large bowl, combine the bread cubes, pineapple chunks, cooked onion and celery mixture, vegetable broth, salt, pepper, and parsley. Mix well.

Transfer the mixture to a greased baking dish.

Bake for 25-30 minutes, or until the top is golden brown.
